Canning up some Dilly beans!

Turned a bunch of green beans from the garden into pickled green beans (aka dilly beans)! I used a basic Pickling brine .

4 cups white vinegar

4 cups water

4 tbsp canning salt

Then I steam canned for 10 minutes. You could also waterbath them for the same amount of time. Unfortunately, I didn't get any pictures of the finished product because it was late, and I just forgot 😅

... Read moreCanning dilly beans is a popular method of preserving fresh green beans by pickling them in a vinegar and salt brine, which provides a tangy and flavorful snack or side dish. The process begins by trimming, washing, and cutting the beans to fit into sterilized jars. Adding aromatics such as garlic, fresh dill, and peppercorns enhances the flavor profile, giving the beans their signature 'dilly' taste. The pickling brine typically consists of equal parts white vinegar and water, combined with canning salt. This salt differs from table salt because it doesn't contain additives that can cloud the brine or affect preservation. The key to a successful preservation is ensuring the brine has the proper acidity to prevent bacterial growth. Once the jars are packed tightly with beans and aromatics, and the brine added leaving a half-inch headspace, it’s important to seal the jars properly using quality canning lids and rings—brands like Superb and Ball are trusted for creating airtight seals. Steam canning for 10 minutes is an effective method to kill microorganisms and seal the jars. Alternatively, a water bath canning method for the same duration is suitable and accessible for many home canners. Before starting, clean all jars thoroughly to avoid contamination. Using fingertip-tighten rules for lids ensures they’re not too tight to vent gases during processing. After processing, allow jars to cool undisturbed and check seals before storing. Properly canned dilly beans can last for up to a year when stored in a cool, dark place. They make an excellent addition to salads, charcuterie boards, or as a crunchy snack straight from the jar. Incorporating these techniques supports food preservation efforts, reducing waste by extending the shelf life of garden produce safely. For those new to home canning, it’s essential to follow guidelines from trusted sources like the USDA or Ball Blue Book of Preserving to ensure safety. Remember to adjust processing times for altitude if necessary. Exploring pickled green beans is a versatile and rewarding way to enjoy the garden’s bounty throughout the year.
