Baked Salmon and Sweet Potatoes

Oh give thanks to the Lord for he is good. His mercy endures forever-Psalms 107:1

Ingredients: Sweet potatoes, Fresh Salmon, Butter, Garlic, Honey, Rosemary, Salt, Pepper, Lemon

•Slice two large sweet potatoes into thin round slices

•Bake the sweet potato rounds for 12 minutes

•Combine the softened butter, garlic, honey, rosemary, salt, and pepper in a small bowl

This simple butter mixture is going to melt into the salmon as it bakes and create the most amazing salmon!

•Remove the sweet potatoes from the oven.

•Then place the salmon fillets directly on top of the sweet potatoes.

•Spread the butter mixture evenly on salmon pieces. •Place the lemon slices on top.

•Put the pan back in the oven and cook for 10 to 15 minutes or until the salmon is opaque throughout.

The cooking time will depend on the thickness of your salmon pieces. Check at 10 minutes to be safe. You don’t want to over cook the fish.

Dinner is DONE! Serve the salmon with the sweet potatoes and enjoy!
