... Read moreOkay, so I recently discovered the magic of baked salmon meatballs, and let me tell you, they've become a new favorite in my kitchen! I used to think making meatballs was a huge fuss, but this recipe changed my mind. Not only are they incredibly delicious, but they're also super quick and healthy. For busy weeknights, these are a lifesaver.
If you're looking for a healthier alternative to traditional ground meat, salmon is fantastic. It's packed with Omega-3s, which are great for your heart and brain. Plus, my kids, who can sometimes be picky with fish, absolutely adore these. The mild flavor of the salmon combined with the savory seasonings makes them truly irresistible. And baking them instead of frying? Total game-changer for a lighter meal!
One thing I learned quickly is not to overmix the salmon mixture – just combine until everything comes together. This helps keep them tender. When you're forming them, try to make them roughly the same size so they cook evenly and get that beautiful golden-brown crust I love. A little trick I found is to lightly oil my hands before rolling to prevent sticking. The close-up image really captures how perfectly golden-brown they get!
Now, let's talk about that creamy avocado sauce! It's what truly elevates these meatballs. The zesty lemon and garlic perfectly cut through the richness of the salmon and avocado. I love how it looks – that gorgeous light green color is so appealing. I usually serve these salmon bites with a simple side salad or some fluffy quinoa for a complete meal. They're also amazing as appetizers for a party, perhaps with a sprinkle of fresh herbs on top for presentation, just like in the close-up image. Another idea? Pop them into a whole wheat pita with some shredded lettuce for a quick lunch!
Want to switch things up? You can easily customize the meatballs. Sometimes I add a pinch of chili flakes for a little kick, or finely chopped red onion for extra flavor. For the avocado sauce, if you don't have sour cream, Greek yogurt works wonderfully for a tangier, even healthier version. You can also make a bigger batch of the meatballs and freeze them cooked. Just reheat them in the oven for about 10-15 minutes, and they're as good as fresh! This has been a huge time-saver for my meal prep Sundays.
Seriously, if you're looking for a healthy, easy, and incredibly versatile recipe that the whole family will love, these baked salmon meatballs with creamy avocado sauce are a must-try. They're so much more exciting than plain baked salmon, and trust me, that sauce is addictive!
Made this and the salmon bites were a hit however, I had to add a little water to make the sauce it was to thick and lemon juice would have made it to tart but overall it was good
