... Read moreWoohoo! We've made it to Day 4 of our sourdough starter journey, and it's an exciting time when things really start to pick up. If you've been following along, you've probably noticed some changes, and today is crucial for nurturing our little bubbly friend. First things first, let's talk about the discard. It feels a bit wasteful at first, but discarding 1 cup of your sourdough starter is absolutely essential. Think of it as making room for new, fresh food and concentrating the active yeast and bacteria that are truly thriving. This prevents your starter from becoming too acidic or diluted, giving it the best chance to become strong and vibrant. I always try to do this right before feeding. Next up: feeding time! After you discard, it's time to replenish your starter. Based on my experience, consistency in your feeding routine is key. I typically feed with 1/2 cup of all-purpose or bread flour – make sure it's unbleached, as chlorine in bleached flour can harm your starter's delicate ecosystem. Then, I add 1/4 cup of warm water. The warmth is important because it helps to wake up those hungry microbes and encourages activity. Just make sure it’s not too hot; lukewarm (around 70-75°F or 21-24°C) is perfect. Now, what should your sourdough starter Day 4 look like? By now, you should be seeing more consistent signs of life. Look for small bubbles forming on the surface and along the sides of your jar, especially a few hours after feeding. It might even show a slight rise, though it might not double in size just yet. The smell should be pleasantly tangy, perhaps a bit yeasty, moving away from any off-putting smells you might have noticed on earlier days. Right after feeding, your starter might look smooth and a bit thin, but give it a few hours, and those bubbles should reappear, showing you it's happily munching on its new meal. If your Day 4 starter seems a little sluggish, don't despair! Sourdough is a marathon, not a sprint. Check your ambient temperature; a slightly warmer spot often speeds things up. Also, ensure your water is chlorine-free – if you use tap water, letting it sit out for a few hours can help the chlorine dissipate. Sometimes, a starter just needs a little more time and consistent feeding to hit its stride. Keep observing its behavior – every starter has its own personality, and learning to read yours is part of the fun! Continue this discard and feeding routine daily, and soon enough, your starter will be strong and ready for baking those delicious loaves.

Day 4 and I’m not seeing any activity. On one hand the little excitement I got from the false rise also came with some worry. I was worried because there was too much activity too soon. In my experience with making a sourdough starter from scratch it takes a couple days for that kind of activity.
