Many of you might be wondering, 'how to feed sourdough starter without a scale?' or 'how do you start sourdough bread?' Don't worry, I've got you covered with my continued tips for keeping your starter happy and healthy, all without needing any fancy equipment. After that initial Day One success, the most crucial step is consistent feeding. My method for feeding, just like starting, keeps it super simple. Remember that 1:1 ratio for flour and water? We're sticking with that! When your starter looks bubbly, smells a little tangy but pleasant, and has fallen back down after rising (usually 12-24 hours after its last feed, depending on temperature), it’s time to feed. First, you'll need to 'discard' some of your starter. This sounds harsh, but it's essential to keep your starter from getting too big and sluggish. I usually scoop out about half to two-thirds of it, leaving just a small amount, maybe 1/4 cup or a few tablespoons, at the bottom of the jar. You can use the discard for other recipes like pancakes or crackers, so nothing goes to waste! Now, for the feeding without a scale: I simply add about 1/4 cup of unbleached flour and 1/4 cup of clean water to the remaining starter. Stir it all together until it's smooth and has that familiar thick pancake batter consistency. If it looks too thick, add a tiny bit more water; if too thin, a tiny bit more flour. It's all about visual cues and feel, which makes it truly accessible for everyone. Cover it loosely again and let it sit on your countertop. You're effectively continuing the 'Sourdough Starter Day THE EASY WAY' philosophy. Many of you are probably eager to know 'how to measure sourdough starter without scale' for your actual bread recipes. Once your starter is mature and active (doubling in size consistently after feeding), you can measure it by volume for your bread. Most recipes call for a certain weight, but you can approximate with cups or tablespoons. For instance, 1 cup of active starter is roughly 220-240 grams. If a recipe calls for 100g, you'd use a bit less than half a cup. I often just eyeball it, using a generous half cup if I need around 100-120g of active starter, always focusing on consistency. So, 'how do you start sourdough bread' once your starter is ready? When your starter is consistently doubling and bubbly within 4-8 hours after feeding, that's your cue! This active starter is what you'll use in your bread dough. You'll typically mix your active starter with flour, water, and salt, then begin the process of stretching, folding, and fermenting your dough. It's a whole new adventure, but having a robust starter is the first and most important step. Don't be afraid to experiment! Your kitchen temperature plays a huge role, so don't get discouraged if your starter seems slow; sometimes it just needs a warmer spot.
