✶ 10-Layer Mars Cake ✶

Ten layers of chocolate and caramel, inspired by the beloved Mars bar. Rich, smooth, and finished with gold and ganache — every slice tells a story of indulgence.

🔘Cake Batter:

3 eggs

160g sugar

2 tbsp honey

62g butter

2 tbsp cocoa powder

1 tsp baking soda

2 cups flour

🔘Chocolate Cream:

600 ml heavy whipping cream (35%) (very cold)

1 can condensed milk

100 g chocolate (melted and cooled down)

🔘Chocolate ganache:

170 g chocolate chips

1/2cup heavy whipping cream

🔘Caramel Sauce

1 cup sugar

2 tbsp (28g) butter(room temp)

1 cup heavy whipping cream(hot)

1/2 tsp salt

🔘Prep and baking process:

Preheat the oven to 375F/190C.

In the medium saucepan mix butter, eggs, sugar, cocoa powder and honey.

Put the mixture on water bath or place on low heat on the stove.

As soon as the butter dissolves, add baking soda and continue stirring, the mass will start foaming.

Remove from heat and add flour. Mix flour with the mixture.

Pour 4-5tbsp of flour on the table and transfer the dough on the table. Carefully knead the dough like on the video. When dough is ready, it will not stick to your hands.

Divide the dough into 10 parts! The diameter of my cake is 8 inch.

Roll out each piece on a sheet of parchment paper dusting with flour into a thin layer and cut into 8 inch round. Fork the dough and bake each round layer for about 5 minutes.

After you are done with your cake layers start making your chocolate cream.

Start by whipping your heavy whipping cream at low speed gradually increasing.

As soon as the mass begins to thicken a little, pour condensed milk in a thin stream and continue whipping.

When the mass thickens, reduce the speed and add pre-melted and already cooled chocolate.

You will have a delicate chocolate cream.

Start assembling the cake one by one.

On each cake layer spread chocolate cream and drizzle with caramel.

Continue until you will be done with your cake layers.

On the last layer spread the remaining cream and even out the whole cake.

Top the sides of the cake with ganache drip and spread caramel in the middle. Decorate with mars chocolate and add gold leaves (optional).
