Cake:
2 cups flour
3/4 cup cocoa powder
2 cups sugar
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 cup buttermilk or whole milk sour cream
1/2 cup vegetable oil
2 eggs
1 tsp vanilla
1 cup boiling water
Frosting:
1 cup butter
3 1/2 cups powdered sugar
1/2 cup cocoa powder
1/2 cup heavy cream
FOR GANACHE: Use wafers or chips not powder
Preheat oven to 175°C (350°F) and prepare two 9-inch pans.
Mix dry ingredients in a bowl. Add milk, oil, eggs, and vanilla. Mix well.
Stir in boiling water. Divide batter into pans and bake for 30–35 minutes. Cool.
For frosting, beat butter, powdered sugar, cocoa, and cream until fluffy.
Frost and assemble the cake.
For ganache: melt butter then melt chips using melted butter. Once completely melted and combined add powdered sugar and cream.
Double recipe for large bundt cake. Enjoy !
