🍋 Lemony Greek Yogurt parfait 🍋

Back in the day I was obsessed with KFC lemon Parfait. Today when my husband brought home Greek yogurt with a few items he grabbed from the store, the parfait popped in my head and I declared, “this finna be good!”

This recipe is easy peasy lemon squeezy (pun intended).

What’s needed 🍋

_____________________

1 cup vanilla Greek yogurt

1/2 lemon

1 tablespoon of honey

Whipped cream

1/4 cup heavy whipping cream

2 tablespoons powder sugar

1 tablespoon vanilla abstract

1/4 cup granola

Directions 🍋

In a bow mix together a cup of vanilla Greek yogurt (I prefer honey vanilla by Greek Gods because it’s the best tasting Greek yogurt on the block) with juice from half of a lemon and a tablespoon of honey.

For whipped cream you can use store bought but it’s easy to whip it up yourself as I did. Place mixing bowl and mixing attachments in freezer for five minutes until cold. Add 1/4 cup of heavy whipping cream, 2 tables of powder sugar and 1 tablespoon of vanilla abstract. Mix on high until stiff peaks form and immediately stop mixing. (It should only take a couple of minutes).

Add the yogurt to your bowl. Layer with granola and top with whipped cream.

Slightly healthier version of a lemon parfait and I promise it’s just as good!!! 😊
