MediterraneanInspired Sheet Pan Chicken

One of my favorite recipes to cook when I don’t feel like cooking. Not a lot of prep time involved 😚

Ingredients:

- 2 boneless, skinless chicken breasts, chopped into pieces about 1-2 inches long

- 2 bell peppers, cored and chopped

- 5-7 red potatoes, cut into quarters

- 1 Vidalia sweet onion, chopped

- 2 medium lemons, juiced

- 2 tbsp mediterranean seasoning (I use the brand Dash “pasta blend mediterranean”)

- 3 tbsp olive oil

- 1 tsp onion powder

- 1 tsp garlic powder

- 1/2 tsp salt

- 3/4 tsp black pepper

Directions:

1. Preheat the oven to 400°F.

2. Line a large baking sheet with aluminum foil for easy cleanup. Spread the Boneless, Skinless Chicken Breasts (2), Vidalia Sweet Onion (1), Baby Potatoes (5-7), and Bell Peppers (2) across the baking sheet into a single layer.

3. Drizzle Olive Oil (3 Tbsp) and Lemon Juice (2) over all the chicken and vegetables.

4. Sprinkle the chicken and vegetables with mediterranean seasoning (2 Tbsp), sea Salt (1/2 Tbsp), Freshly Ground Black Pepper (3/4 tsp), Garlic Powder (1 tsp), and Onion Powder (1 tsp).

5. Place the sheet tray in an oven. Cook for 40 minutes or until the chicken is cooked completely and the potatoes are fork-tender.
