lazy dinner🫠

What I cook after work :)

Nothing fancy today.. just a little homesick green curry chicken 🐣

CNY wiped out half the ingredients so I went full improv mode and made a healthier version:

- Chicken breast

- Zucchini instead of eggplant

- Oat milk instead of coconut milk

- Chilli, basil

- Green curry paste (I’m not grinding anything after work 😂)

Follow the step-by-step in my video.

Promise next time I will do more authentic, when I’m not lazy.

Best with rice… and even better with rice noodles 🤎

What I love about this green curry chicken recipe is how adaptable it is—you can swap out traditional ingredients for what you have on hand without compromising flavor. For example, replacing coconut milk with oat milk creates a lighter dish perfect for those watching their fat intake or dairy-sensitive individuals. The choice of chicken breast makes it lean and protein-rich, while zucchini adds a subtle sweetness and texture that complements the spicy curry paste. Plus, skipping the time-consuming step of grinding your own curry paste saves a lot of effort on busy days. If you want to enhance your meal further, consider adding fresh herbs like Thai basil or cilantro for an aromatic boost. You can also add vegetables like bell peppers or snap peas depending on your fridge’s contents. Serving this curry with steamed jasmine rice or rice noodles rounds out the meal beautifully, soaking up all the flavorful sauce. From my experience, improvising with what’s available in your pantry can reduce waste and keep cooking enjoyable rather than stressful. This recipe reflects how homemade comfort food doesn't have to be complicated or time-consuming, especially after a hectic day. Plus, you get the satisfaction of a wholesome, home-cooked dinner without spending hours in the kitchen. Give this easy green curry a try next time you're in a lazy dinner mood—it’s nourishing, flavorful, and hassle-free.
