lazy dinner

Dinner tonight is all about keeping things simple. ☁️ There is something so grounding about a quiet kitchen and a bowl that didn't take all evening to prep. This air-fryer salmon is my favorite way to slow down.

The Goods:

- Salmon fillet

- Rice

- Mushrooms & Carrots

- Edamame

- Soy sauce & sesame oil

How I make it:

1. Air fry the salmon at 200°C for 10 mins.

2. Quick stir-fry for the veggies with soy and sesame oil.

3. Serve over rice with a sprinkle of sesame seeds.

Just a simple, easy reset. ✨

... Read moreAfter a long day, I often crave meals that are both nourishing and require minimal effort to prepare. This lazy dinner approach with air-fryer salmon and a medley of vegetables hits just the right note. Air frying the salmon at 200°C for 10 minutes not only locks in moisture but also delivers a perfectly cooked fillet with a subtly crispy edge—without the need for added oils. Pairing it with stir-fried mushrooms, carrots, and edamame gives the meal a lovely balance of textures and flavors, while the soy sauce and sesame oil add a comforting umami kick. What I appreciate most about this recipe is how it restores a sense of calm and mindfulness in the kitchen. Even on the busiest days, taking a moment to prepare fresh ingredients and combine them simply can feel like a reset. Using fresh produce and cooking from scratch enhances both the taste and nutrition, making it easier to enjoy dinner without guilt or fuss. If you’re new to air frying, this salmon dish is a great way to start because it’s forgiving and quick. You can easily customize the vegetables based on what’s in season or your personal preferences. I often sprinkle toasted sesame seeds on top for added crunch and a nutty aroma. Served over fluffy rice, it makes for a satisfying and wholesome dinner that truly doesn’t take all evening to prepare. This recipe is ideal for anyone looking to keep dinner simple, wholesome, and delicious—proving that you don’t need to spend hours in the kitchen to enjoy a homemade meal that feels special.
