well, my first attempt at sourdough was a wash.
did the bread come out pretty and porous? NO.
is it still edible? YEAH! the flavor and texture are okay. but it won't go to waste. I'll brobky make croutons out of it.

Oh, I totally get that 'sour-DOH!' feeling! My first few sourdough attempts were definitely more 'dense crumb' and 'uneven holes' than beautifully airy. It's so easy to get discouraged when your loaf doesn't look like those perfect Instagram pictures, right? But honestly, the fact that yours is still edible and has good flavor is a huge win! So many beginners throw out their first attempts, but you're spot on – never waste good (even if imperfect) sourdough. I remember one of my early loaves had a really tight, almost cake-like texture inside, despite having a lovely 'golden-brown crust'. I was so confused! After a lot of research and trial-and-error (and a few more 'not perfectly porous' loaves), I realized my starter wasn't as active as it needed to be. It looked bubbly, but it wasn't quite doubling in size fast enough. Giving it an extra feeding or letting it sit in a warmer spot really made a difference for me. Another common culprit for that dreaded dense crumb is under-proofing. It's so tempting to want to bake it as soon as you see some bubbles, but learning to tell when your dough is truly ready – the 'jiggle test' or the 'poke test' – is a game-changer. Over-proofing can also lead to a flat, dense loaf, so it’s a delicate balance! And shaping! Oh my goodness, shaping is an art form I'm still mastering. I used to just plop my dough into the banneton, and it would spread out into a sad pancake in the oven. Learning proper tension and how to develop a taught skin on the dough has significantly improved my oven spring and led to more open crumbs. Don't be afraid to watch a dozen different shaping videos; each one offers a nugget of wisdom! But even when your loaf isn't picture-perfect, there are so many delicious ways to use it. Making croutons, like you mentioned, is brilliant! I also love turning my 'ugly' loaves into amazing garlic bread. Just slice it thick, slather with garlic butter, and bake until golden. It’s also fantastic for French toast or bread pudding – the slightly denser texture actually holds up really well. And if you have a food processor, turning it into homemade breadcrumbs is super easy and way better than store-bought. You can even dry it out and make a panzanella salad! The sourdough journey is definitely a marathon, not a sprint. Every loaf, even the 'sour-DOH!' ones, teaches you something new.
