1 cup UNFED starter
1 cup warm water
3 cups flour
3/4 tsp salt
Mix together until shaggy dough. Let rest 30 minutes. Do one set of stretch and folds. Let ferment at room temp for 4-5 hours. Shape and put in fridge overnight.
Preheat oven to 450 with Dutch oven inside.
Bake covered 30 mins and uncovered another 20.
