This dish truly feels gourmet but is surprisingly simple to whip up, perfect for a cozy weeknight dinner or when you want to impress without all the fuss. First, let's talk about the 'stuffed' part. For me, a classic creamy spinach and cream cheese stuffing is a winner. You'll need about 4-6 oz of fresh spinach, lightly sautéed and squeezed dry to remove excess water. Mix that with about 2-3 oz of softened cream cheese, a clove of minced garlic, a pinch of salt, and a dash of black pepper. Some people like to add a sprinkle of Parmesan or a tiny bit of lemon zest for an extra zing, which is optional but delicious! Now for the salmon fillets: you'll want about 4-6 oz fillets, skin on or off, it's totally up to you. Using a sharp knife, carefully slice a pocket into the thickest part of each salmon fillet, making sure not to cut all the way through to the other side. Gently spoon your creamy spinach mixture into these pockets. Don't overstuff, or it might burst during cooking. When it comes to cooking, baking is my preferred method for stuffed salmon. Preheat your oven to 400°F (200°C). Place the stuffed salmon fillets on a lightly greased baking sheet. Bake for about 12-18 minutes, depending on the thickness of your salmon and your desired doneness. You want it flaky and cooked through but still moist. If you prefer to pan-sear, you can do that too, just be careful flipping to keep the stuffing intact! While your salmon is baking, it’s Alfredo time! My 'quick and easy' creamy Alfredo sauce starts with melting 2 tablespoons of unsalted butter in a saucepan over medium heat. Add 2 cloves of minced garlic and sauté until fragrant (about 30 seconds – don't let it brown!). Then, pour in 1 cup of heavy cream. Bring it to a gentle simmer, then reduce the heat to low. Gradually stir in about ½ cup of freshly grated Parmesan cheese. Keep stirring until the cheese is melted and the sauce thickens slightly. Season with salt, black pepper, and a tiny pinch of nutmeg if you're feeling fancy – it really elevates the flavor! Once your salmon is perfectly cooked, plate it up and generously spoon that rich, creamy Alfredo sauce over the top.
