Sourdough Garlic Knots!

Ingredients:
•100g Active starter
•1.5 sticks unsalted butter
•42g honey
•10g salt
•270g filtered water (room temp)
•500g bread flour
•Parmesan cheese
•Parsley flakes
Instructions:
-Add all of the ingredients (only 1/4 cup butter) to a stand mixer with dough hook attachment
-Mix low speed for 8-10 mins. It should be smooth on the surface and should pull away from the sides of the bowl
-Remove the bowl from the mixer and cover with plastic wrap or a shower cap until it doubles in size (8-10 hours)
-Flour your surface and transfer the dough, then let it rest for 10 minutes
-Sprinkle flour on the dough and divide it into 12 equal sections (~80g each)
-Roll each section into a log, gently stretch, tie it into a knot and tuck the ends underneath
-Line a baking sheet with parchment paper and spray with cooking spray
-Place each knot on the tray, sprinkle garlic salt on top and cover with a clean towel until they rise roughly 30% and look puffy
-Preheat your oven to 400 degrees and bake for 20 minutes or until they’re golden brown on top
-While they cook, bring 1/2 stick of butter and one tablespoon of minced garlic to a simmer
-Remove the knots from the oven and top them with the garlic butter. Sprinkle parsley flakes and top with parmasean cheese
