Mediterranean Salad

Ingredients:

Grilled Chicken, seasoned with salt and cracked pepper

Farro, seasoned with chicken broth, onion powder, oregano, and lemon juice

Mixed Arugula and Spring Salad Mix

Grilled Green Beans, cut into inch pieces

Grilled Peaches, sliced

Fresh Burrata

Salt and Pepper, to taste

Olive Oil

Balsamic Glaze

Fresh Basil, for garnish

Lemon Juice

Instructions:

Start by grilling the chicken breast until cooked through. Season with salt and cracked pepper for added flavor. Set aside to cool slightly before slicing into thin strips.

Prepare the farro on the stove top by cooking it according to the package instructions. Season with chicken broth, onion powder, oregano, and a splash of lemon juice to enhance its taste. Allow it to cool.

In a large mixing bowl, combine the cooked farro, mixed arugula, and spring salad mix. Toss gently to evenly distribute the ingredients.

Add the grilled green beans, cut into inch pieces, to the salad mixture. This adds a delightful crunch and vibrant color to the dish.
