Peanut butter date chocolatey bites

Ingredients:
8 medjool dates @jooliesdates
90g peanut butter @teddiepeanutbutter
100g dark chocolate chips @guittardchocolate
40g unsweetened soy milk to melt the chips in microwave @silk
How I made mine:
I took 8 medjool dates, softened them in hot water and squished them into the bottom of a soupercube tray (the 2 tablespoon one) - the 8 dates I pulled apart and that was able to fill the bottom of all the cubes
Spread peanut butter on top of each date evenly
Melted the chocolate and spread over the top of each of the bites. Let chill in the fridge… they are delicious
