Pecan upside down cake

Pecan layer:

- 150g pecans

- 120g light brown sugar

- 60g butter

- 30ml heavy cream

- 60g golden syrup (Or honey / maple syrup / corn syrup)

- 1 tsp cinnamon

1. Roughly chop the pecans

2. In a pan over medium heat, combine the butter, sugar, cinnamon, and golden syrup

3. Mix and cook until combined then add the heavy cream. Cook until it bubbles and thickens slightly

4. Add the pecans. Cook for 1-2 minutes

5. Pour the pecan layer into a pan that’s lined. The bottom of your pan should be fully covered with parchment paper to prevent the pecans from sticking. Grease the sides as well

For the cake:

- 200ml whole milk

- 1 tsp lemon juice

- 1 egg 1 egg yolk

- 60ml oil

- 10ml vanilla

- 200g sugar

- 1 1/2 tsp baking powder

- 200g all purpose flour

- 1/2 tsp Salt

- 1 tsp cinnamon

- 1/2 tsp ground ginger

- 1/2 tsp nutmeg

1. In a bowl, whisk the flour, salt, baking powder, ground ginger, cinnamon and nutmeg

2. In a separate bowl, combine the milk and the lemon juice. Let it sit for a few minutes

3. Add the egg, egg yolk, oil, vanilla and sugar. Whisk well

4. Add the wet ingredients into the dry. Whisk until lump free

5. Pour the batter on top of the cooled pecan layer. Spread it out evenly

6. Bake in a preheated oven at 350F for 35 mins

7. Allow to cool in the pan for 10 minutes then invert onto a serving plate and peel off the parchment paper
