S’mores cookie cups
Makes: 12
For the cookies:
- 100g unsalted room temp butter
- 110g granulated sugar
- 110g light brown sugar
- 15ml vanilla
- 1 room temp egg
- 200g all purpose flour
- 10g corn starch
- 1/2 tsp salt
- 1 cup chocolate chips
To fill:
- 4 graham cracker cookies, roughly crushed
- 6 marshmallows
- Melted chocolate
1. In a bowl, combine the sugar, butter, vanilla and egg. Whisk until smooth
2. In a separate bowl, whisk the flour, corn starch and salt
3. Add the wet ingredients into the dry. Mix with a spatula until a dough forms
4. Add the chocolate chips, fold them in until just combined
5. Evenly distribute the cookie dough between a 12 count cupcake pan
6. Flatten the cookie dough into an even layer in each divid
7. Bake in a preheated oven at 350F for 20 mins
8. Take them out of the oven then use the back of a measuring spoon to create an intend
9. Add crushed the graham crackers to the bottom and push it in
10. Cut your marshmallows in half. Add them to the cups then bake for 5 minutes
11. Torch the marshmallows then add melted chocolate
