Ingredients:
3 ripe bananas (340g)
80g melted unsalted butter
40g vegetable oil
80g brown sugar
60g granulated sugar
1 egg
40ml room temp milk
40g plain Greek yogurt
170g all purpose flour
20g unsweetened cocoa powder
3 tsp baking powder
1/2 tsp salt
80g chocolate chips for the batter
150g chocolate chips to the top
1. in a bowl, mash the bananas well. If they’re not ripe, bake at 400F until brown. Set aside
2. In a bowl, whisk the sugars, melted butter, oil, egg, milk, and yogurt
3. Add the mashed bananas and whisk well
4. In a separate bowl, whisk and sift the flour, cocoa powder, baking powder and salt
5. Add the dry ingredients into the wet. Fold until combined
6. Add the chocolate chips, fold until combined
7. Pour the batter into a large lined loaf pan. Make sure you have at least 2” of parchment paper overhang so you can easily take the cake out without the chocolate chips falling off
8. Bake at 350F for 55-60 mins
9. As soon as you take the cake out, pour the chocolate chips on top. The heat from the cake will help them stick
10. Allow the chocolate chips to set slightly and enjoy
