Mini Biscoff cheesecake 🤎

For the crust:

150g biscuits

60g melted unsalted butter

1. Line a 6” round pan. Sides and bottom

2. Crush the cookies in a food processor then add the butter

3. Press the crust firmly into the pan. Bring but up the sides by 2”

4. Bake at 350F for 10 mins. Allow to cool

5. Reduce oven to 300F

Cheesecake:

300g room temp cream cheese

95g granulated sugar

80g yogurt

40g crunchy Biscoff spread

1 egg

1. Beat the cream cheese until smooth

2. Add the sugar and mix until lump free

3. Add the yoghurt, mix

4. Add the egg and mix until just combined

5. Whisk in the melted lotus Biscoff spread

6. Pour in the batter

7. Place a oven safe dish that’s filled with hot water in the bottom rack of your oven

8. Place the cheesecake in the rack above

9. Bake at 300F for 40 mins

10. Turn the oven off, crack the door open, and let the cheesecake gradually cool inside for 20 mins

11. Allow the cheesecake to cool fully then refrigerate for 2-4 hours

Topping:

50g crunchy Biscoff spread

Crushed Biscoff

Biscoff cookies
