For any of you just getting into sourdough, understanding your crumb is truly a game-changer! It's like your bread is talking to you, revealing its secrets. What is a Crumb Shot and Why Analyze It? A "crumb shot" is simply a photo of your baked bread's interior. For beginners, it's your best diagnostic tool! Early on, my loaves were dense or gummy, and I felt lost. Learning to 'read' my crumb helped me understand if I under-proofed, over-proofed, or needed more hydration. It turned baking frustrations into valuable learning experiences. Key Crumb Indicators for Beginners: Openness vs. Density: An open crumb with larger, irregular holes often means good fermentation and gluten development.
