main bowl ingredients:

- 1/2 red onion

- cucumber (cut into 1/4s)

- romaine lettuce (chopped)

- tomatoes (optional)

- 1 cup brown rice

- halloumi

- pita chips

- feta

hummus ingredients:

- 1 can of chickpeas (save liquid from can and add into to mixture)

- 1 tbsp olive oil

- 2 cloves of garlic

- 1/4 cup tahini

- 1 tbsp lemon juice

- pinch of salt

mix all hummus ingredients in blender, add in water as needed

tzatziki ingredients:

- 1/2 cup grated cucumber

- 1 cup greek yogurt

- 1 tbsp olive oil

- 1 tbsp lemon juice

- 1 clove garlic garlic

- pinch of salt

- 1 tbsp chopped dill

- 1 tbsp chopped mint

add all tzatziki ingredients in a bowl and mix

greek dressing:

- olive oil

- red wine vinegar

- 1 clove garlic

- dried oregano

- salt and pepper

- 1 tbsp honey

- 1 tbsp lemon juice

salad instructions:

- add chopped cucumber, lettuce, and red onion into a bowl, mix in greek dressing

halloumi instructions:

- make mixture of oil and honey

- cut halloumi into slices

- heat olive oil on pan and add halloumi

- slowly pour mixture over halloumi

- flip halloumi once cooked on bottom
