· Milk... 300 g
・ Egg... 1 piece

How to make
Cut the peeled corn in half, stand it on a cutting board and scrape off the fruit with a kitchen knife. (Since the core is also used, keep it)
Melt the butter in a pan, add the corn and stir-fry over medium heat for about 1 minute.
Add water, milk and corn core and cook over low heat for about 5 minutes (until corn is soft)
Remove the wick and stir with a blender or mixer until smooth.

栗米湯(りーみーたん)は、ざっくり言うと「中華のコーンスープ」のこと。漢字だけ見ると“栗?”って迷うんですが、実際はとうもろこしの甘みを活かした、とろっとしたスープです。外食の中華屋さんで出てくる、あの黄色くてふわっと卵が浮いたスープをイメージすると近いです。 私が作ってみて「これが1番いい仕事してくれる」と感じたのが、とうもろこしの“芯”を一緒に煮ること。実だけで作るより、香りと甘みの立ち方がぐっと変わります。芯は食べないので、煮たあとに取り出せばOK。生のとうもろこしが手に入る季節は、ぜひ芯まで使ってほしいポイントです。 【栗米湯の味が決まるコツ】 ・実は包丁で削いでから使う:粒の甘みがしっかり出ます。 ・バターで軽く炒める:香りが立ってコクも出るので、家庭でも“お店っぽさ”が出やすいです。 ・弱火で煮る:強火だと牛乳が分離しやすいので、やさしく温めるのが安心。 ・ブレンダー(またはミキサー)で滑らかになるまで攪拌:粒感が好きなら短め、なめらか派ならしっかり。 【とろみ付けがうまくいかない時】 とろみは「片栗粉の量」だけじゃなく、とうもろこしの水分量でも変わります。思ったよりサラサラなら、水溶き片栗粉を少しずつ追加(入れたら一度しっかり温めて、とろみが出るのを確認)。逆に十分とろみがある日は、片栗粉なしでもちゃんと“栗米湯っぽい”仕上がりになります。 【ふわ卵にするコツ】 溶き卵は、スープを軽く沸く手前くらいに温めてから「細く・少しずつ」流し入れるとふわっとなりやすいです。入れた直後に混ぜすぎると濁るので、最初は触りすぎないのがおすすめ。 【具材アレンジ】 定番はカニカマですが、鶏むねのほぐし身やハム、コーンの粒を少し残して食感を足すのも良かったです。朝ごはんにするなら、パンにもごはんにも合うので助かります。 「栗米湯とは?」の答えは、とうもろこしの甘みを芯まで引き出す中華コーンスープ。シンプルなのに満足感が高いので、とうもろこしが美味しい時期にぜひ試してみてください。
