4 slices white bread (edges trimmed)
2 cups whole milk
1 cup heavy cream/evaporated milk
½ cup sweetened condensed milk
¼ cup sugar
¼ tsp cardamom powder(optional)
2–3 tbsp chopped almonds (optional)

After mastering the basic no-cook kulfi, my next adventure was chocolate! It's super easy to transform this recipe into something truly decadent. For a rich chocolate kulfi, I've found whisking in 2-3 tablespoons of unsweetened cocoa powder along with the condensed milk works perfectly, giving it a deep, satisfying cocoa flavor. If you prefer a sweeter, melt-in-your-mouth chocolate experience, try melting about ½ cup of your favorite semi-sweet chocolate chips and folding them into the chilled milk mixture before freezing. You can even swirl in some chocolate syrup or add finely chopped chocolate pieces for extra texture and a marbled effect. Trust me, the chocolate version is an absolute dream, especially if you have a sweet tooth like mine! It's become a go-to for family gatherings. Then, I got a little adventurous and tried a lavender kulfi – it sounds incredibly fancy, but it's surprisingly simple to achieve that delicate floral note. To infuse the flavor, I gently simmer about 1 teaspoon of dried culinary lavender buds in the whole milk for 5-7 minutes. After simmering, I carefully strain the milk to remove the buds before letting it cool completely. This method delivers a subtle, authentic lavender essence. For a quicker alternative, a few drops of food-grade lavender extract work wonders. Remember to start with just 1-2 drops and taste, as extracts can be quite potent! The subtle floral aroma combined with the creamy texture is just divine and makes for a really elegant, unique dessert that always impresses. This no-cook method truly is a game-changer for kulfi lovers. It opens up a world of possibilities for variations! For a classic pistachio kulfi, I simply add finely ground pistachios and a tiny pinch of green food coloring along with a touch of almond essence if I want to boost the nutty flavor. Mango kulfi is another absolute favorite in my household – I just blend in about ½ cup of good quality mango pulp (fresh or canned) to the base mixture. The beauty of this recipe is its incredible flexibility and how easily you can customize it to your cravings. I've found that using good quality, full-fat dairy makes all the difference in achieving that signature creamy, dense texture. A little tip for freezing: while it's tempting to rush, kulfi truly benefits from a slow freeze to develop its dense, almost fudge-like consistency. I usually let mine freeze overnight.
