私がケーキポップ（ポップケーキ）を初めて作ったときに悩んだのが、「棒を刺したら割れる」「コーティングがボコボコ」「雪だるまの顔がにじむ」の3つでした。今回の“クッキー＋クリームチーズ”生地はスポンジ系より安定しやすいので、ロリポップ作り方を探している人にもおすすめです。 まず、棒が抜けたり割れたりする対策。成形したら冷蔵庫で10〜15分は必ず冷やして、生地を締めます。さらに安心したいときは、棒の先を溶かしたホワイトチョコにちょんと付けてから刺すと「接着剤」みたいになって固定されます（ホワイトチョコはたっぷり用意しておくと作業がスムーズ）。 次に、コーティングをきれいにするコツ。ホワイトチョコは湯せんで溶かしたあと、少しだけ温度を落ち着かせると垂れすぎません。私は深めのコップに溶かしたチョコを入れて、ケーキポップを“どぶん”と一気に浸けてから、くるっと回して余分を落とす方法が一番きれいでした。厚塗りになると乾くまでに筋が出やすいので、薄く均一を意識するとスノーマンの白がつるんと仕上がります。 顔のチョコペンがにじむ問題は、コーティングが完全に固まってから描くのがポイント。急ぐときは冷蔵庫で数分冷やして表面を固めてから描くと失敗しにくいです。目は小さめの点、口は短い点線にすると、曲線がガタついても可愛く見えます。 生地の固さ調整も大事で、手で押して形が保てるくらいがベスト。固い場合はクリームチーズを少し（+5g目安）足し、柔らかい場合はクッキー粉をスプーン1〜2杯追加。クッキーは「チョコクッキー（BLACKMOONみたいな濃いタイプ）」だとコクが出て、見た目だけじゃなく味も満足感がありました。 仕上げに、ラッピングするなら完全に乾かしてから個包装へ。プレゼントやパーティーで配るときも崩れにくく、クリスマスのスノーマンケーキとして映えます。
