Dinner for tonight
Dish 1: Risotto alla Milanese (Saffron Risotto)
Ingredients:
1 cup Arborio or Carnaroli rice
4 cups chicken or vegetable broth
1/2 tsp high-quality saffron threads (plus a few extra for garnish)
1/2 cup dry white wine (like Pinot Grigio)
1 small yellow onion or shallot, finely diced
3 tbsp unsalted butter, divided
1/2 cup Parmigiano-Reggiano, freshly grated
2 tbsp olive oil
Salt and black pepper to taste
Instructions:
1. Prepare the Broth: In a small saucepan, bring the broth to a gentle simmer. In a small bowl, steep the saffron threads in 2 tablespoons of the hot broth and set aside. Keep the remaining broth warm on low heat.
2. Sauté the Onion: Heat the olive oil and 1 tablespoon of butter in a wide, heavy-bottomed pan over medium heat. Add the diced onion and cook until translucent and soft, about 4 to 5 minutes.
3. Toast the Rice: Add the rice to the pan and stir constantly for 2 to 3 minutes until the edges of the grains become slightly translucent.
4. Deglaze: Pour in the white wine and stir continuously until the liquid is fully absorbed by the rice.
5. Simmer and Stir: Begin adding the warm broth to the rice, one ladle at a time. Stir frequently and wait until the liquid is mostly absorbed before adding the next ladle.
6. Add the Saffron: About halfway through the broth-adding process, pour in the saffron-infused broth. Continue adding the rest of the plain broth ladle by ladle until the rice is tender but still has a slight bite (al dente). This usually takes 18 to 22 minutes.
7. Mantecatura (The Finish): Remove the pan from the heat. Vigorously stir in the remaining 2 tablespoons of butter and the grated Parmigiano-Reggiano. The residual heat will melt them into a rich, creamy sauce.
8. Serve: Plate immediately, garnishing with a pinch of black pepper and a few dry saffron threads on top.
Dish 2: Cast Iron Baked Gnocchi and Meatballs
Ingredients for the Meatballs and Sauce:
1 lb ground meat (a mix of beef and pork works best)
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 egg
2 cloves garlic, minced
1 (28 oz) can crushed tomatoes or passata
1 tbsp olive oil
Salt, pepper, and Italian seasoning to taste
Ingredients for the Gnocchi Bake:
1 lb potato gnocchi (store-bought or homemade)
1 cup fresh mozzarella cheese, torn into chunks
1/4 cup Parmigiano-Reggiano or Pecorino Romano, grated
Fresh basil leaves for garnish
Instructions:
1. Form the Meatballs: In a bowl, combine the ground meat, breadcrumbs, 1/4 cup Parmesan, egg, half of the minced garlic, salt, and pepper. Mix gently until just combined. Roll into golf-ball-sized meatballs.
2. Brown the Meatballs: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the meatballs and brown them on all sides. They do not need to be cooked all the way through at this stage.
3. Simmer the Sauce: Lower the heat to medium. Add the remaining garlic to the pot and cook for 30 seconds. Pour in the crushed tomatoes and Italian seasoning. Bring to a gentle simmer, cover, and let the meatballs cook in the sauce for 20 to 30 minutes until fully cooked and tender.
4. Boil the Gnocchi: While the sauce simmers, bring a large pot of salted water to a boil. Drop in the gnocchi. They are ready as soon as they float to the top (usually just 2 to 3 minutes). Drain well.
5. Combine: Gently fold the cooked gnocchi directly into the pot with the simmering tomato sauce and meatballs.
6. Prepare for Baking: Preheat your oven's broiler to high. Transfer the gnocchi, meatballs, and sauce into a large cast-iron skillet (if your current pot isn't oven-safe).
7. Top and Broil: Scatter the torn fresh mozzarella evenly across the top of the skillet. Place the skillet under the broiler for 3 to 5 minutes, watching carefully, until the cheese is melted, bubbly, and slightly browned.
8. Garnish and Serve: Remove from the oven. Top with fresh torn basil leaves and a heavy dusting of grated Parmigiano-Reggiano or Pecorino. Scoop into bowls to serve.
