Single Serve Peach Cobbler 🍑

Peach Filling

* 1 can sliced peaches, drained (I used del monte brand)

* 1-2 tbsp butter, unsalted or salted butter

* 1/2 cup brown sugar, light or brown sugar.

* 2 tbsp white granulated sugar

* 2 tsp cinnamon

* Splash of lemon juice

* 1 tsp vanilla extract

Cobbler Topping

* 2 tbsp all purpose flour

* 2 tbsp white granulated sugar, can be substituted for any other type of sugar

* 1/4 tsp baking powder

* 2 tbsp milk

Cornstarch Slurry

* 2 tbsp water

* 1 tbsp cornstarch

Bake Temperature: 375F

Bake Time: 25-30 until golden brown

14oz ramekin or small baking dish

1. Preheat oven to 375F.

2. Open your can of peaches and drain all the juice out.

3. In a saucepan on medium heat, add butter and let melt.

4. Add your peaches, brown sugar, white sugar, lemon juice, and cinnamon. Mix everything together.

5. Let simmer for 5-7 minutes.

6. Once peaches become slightly soft to touch, make your cornstarch slurry (2 tbsp water + 1 tbsp cornstarch) to thicken up peach filling.

7. Take that off the heat.

8. Now make your cobbler topping.

9. Mix flour, white sugar,baking powder, and milk together until fully combined.

10. Spray your ramekin or baking dish with nonstick spray.

11. Add your peaches to the ramekin.

12. Then pour cobbler topping mixture on top.

13. Bake at 375F for 25-30 minutes until the top is golden brown.

14. Serve with your favorite ice cream.
