Homemade Oatmeal Cream Pies 🤎
Wet Ingredients
* 1/2 cup unsalted butter, softened to room temperature (1 stick)
* 3/4 cups dark brown sugar
* 1/3 cup white granulated sugar
* 1 large egg
* 1 tbsp molasses
* 2 tsp vanilla extract
Dry Ingredients
* 1 1/4 cups all purpose flour
* 3/4 cups old fashioned oats
* 3/4 tsp baking soda
* 2 1/2 tsp cinnamon
Filling
* 1 1/3 cups powdered
* 1/4 cup butter, melted
* 2-3 tbsp heavy cream
* 1 tsp vanilla extract
Bake Temperature: 350F
Bake Time: 11-12 minutes
Yields: 7 oatmeal cream pies
1. Preheat oven to 350F.
2. In a bowl add your softened butter, dark brown sugar, white sugar, and molasses.
3. Cream together with a mixer for 3-4 minutes.
4. Now add your egg and vanilla extract. Mix.
5. Add your flour, oats, baking soda, and cinnamon.
6. Fold into wet ingredients.
7. Line two baking sheets with parchment paper.
8. Scoop with a cookie scoop (about 1 1/2 tbsp).
9. Scoop onto cookie sheet. Make sure they have some space between them because they will spread.
10. Bake at 350F for 11-12 minutes. The middle will appear to be undercooked but that is fine.
11. Take out of oven and let cool for 10 minutes then finish cooling on a cooling rack.
12. This recipe made me 14 cookies, so 7 oatmeal cream pies.
13. Once your cookies are cooled, add your powdered sugar, butter, heavy cream, and vanilla extract in a bowl and mix together until your filling forms.
14. To add your filling, I recommend using a pipping bag to fill.
15. I filled my piping bag with the filling and added it to 7 of the cookies. Then I placed the other respective cookies on top and kinda smashed them together.
16. Now you have delicious oatmeal cream pies that are so easy to make at home without all of the extra unnecessary ingredients.
17. Enjoy 🫶🏽🫶🏽

Oh my goodness, if you've never tried making homemade oatmeal cream pies, you are in for such a treat! I used to grab those store-bought ones for a quick snack, but honestly, nothing compares to the fresh, warm, melt-in-your-mouth goodness of a pie made right in your own kitchen. I first tried this recipe because I wanted to avoid all those mystery ingredients in the packaged versions, and let me tell you, the difference is night and day. My kids (and husband!) absolutely rave about these, and it's become a weekend tradition for us. One of the best things about making these homemade oatmeal cream pies is knowing exactly what goes into them. You get to choose fresh, quality ingredients, and that really shines through in the flavor. The original recipe is fantastic, but I've picked up a few tips along the way that make them even more irresistible. For instance, using good quality molasses and fresh cinnamon can elevate the spice notes in your oatmeal cookies beautifully. Don't skimp on the vanilla extract either – it makes a huge difference in both the cookies and that luscious cream filling. When it comes to the oatmeal cookies themselves, getting that perfect chewy-but-soft texture is key. I've found that not overmixing the dough once the dry ingredients are added helps keep them tender. Also, don't be afraid if the centers look a little undercooked when you pull them out of the oven – they'll continue to set as they cool, leading to that ideal soft bite. Letting them cool completely on a rack before filling is crucial; otherwise, your delicious cream filling might just melt right out! While the classic cream filling is divine, don't be afraid to experiment! I've sometimes added a tiny pinch of nutmeg to the cookie dough for a different twist, or a dash of almond extract to the filling for a subtle nutty note. If you're a fan of flavors similar to an oatmeal raisin pie, you could even try gently folding some plump raisins into a portion of your cookie dough before baking for a delightful variation. These cookies also make a fantastic base for other desserts. Imagine crumbling one over a scoop of vanilla oatmeal ice cream – pure bliss! Or, instead of a traditional cream pie, you could use a chocolate ganache filling for a decadent treat. Once you've made these, you'll want to keep your homemade oatmeal cream pies fresh! I store my finished pies in an airtight container at room temperature for a couple of days, or in the fridge if I've used a particularly dairy-heavy filling and want them to last longer. They're perfect for lunchboxes, after-school snacks, or even a comforting treat with your evening tea or coffee. There's just something so satisfying about sharing these homemade delights with loved ones. It instantly transports you back to simpler times, but with a gourmet touch you created yourself!
