フライパンで「照り焼きタレをしっかり絡めたい」のに、なぜか水っぽくなったり、タレが底に残ったり…ということがよくありました。私が安定して“照り”を出せるようになったポイントをまとめます。 まず大事なのは、具材から出る水分を減らすこと。手羽中はレシピ通りサッと下茹ですると脂だけでなくアクも取れて、臭みが減るうえに仕上がりがベタつきにくいです。茹でたあとはキッチンペーパーで水気をしっかり拭くのが地味に効きます。 次に、フライパンの中の“場所分け”。私は手羽中＋れんこんを焼いて香ばしさをつけたら、フライパンの半分を空けて餅ゾーンを作ります。餅は表面が乾いているとくっつきやすいので、カットしたらサッと水にくぐらせてから焼くと扱いやすいです（入れすぎると逆に水っぽくなるので、軽くでOK）。両面に焼き色がつくまであまり触らないのもポイント。 「照り焼きタレを絡める」工程は、火加減が命でした。具材が焼けたら一度中火〜弱火にして、みりん→醤油の順に入れて全体を手早く混ぜます。強火のままだと醤油が焦げやすく、弱すぎると水分が飛ばず照りが出にくいので、私は“ふつふつしたら少し火を上げて一気に絡める”イメージで調整しています。 さらに確実にするなら、タレを入れる直前にフライパンの余分な油や水分を軽く拭き取るのもおすすめ。底に液体が残っていると、タレが薄まりやすいです。 最後に仕上げのコツ。餅はタレを吸って焦げやすいので、全体がツヤっとしたら早めに火を止めると失敗しにくいです。れんこんはレンチンしておくと炒め時間が短くなり、水分も出にくくてタレが絡みやすくなりました。 このやり方にしてから、フライパンでも照り焼きの“テリテリ感”が安定。手羽中の旨み＋れんこんの食感＋餅の満足感で、忙しい日でもリピしやすい一皿になりました。
