Chicken & Mushroom Glass Noodle Soup
Chicken & Mushroom Glass Noodle Soup
1. Prepare the chicken ( this step is optional)
Rub 1 tablespoon of turmeric powder all over the chicken, then rinse well with cold water. This helps reduce the chicken smell and gives the skin a nice golden color.
2. Cook the chicken broth
Place 1 whole chicken in a pot of cold water. Add salt, rock sugar, chicken seasoning powder, charred shallots &ginger. Bring to a boil, then skim off any foam for a clearer broth. Reduce the heat and simmer for 35–40 mins , or until the chicken is fully cooked.
Remove the chicken and place it in an ice water bath for 10 minutes. Then shred or chop the chicken into small pieces.
Add the mushrooms, carrots, and daikon to the broth. Simmer for 10–15 mins, or until tender.
***This step is optional but make so much different : ( fry some garlic until fragrant and golden, add them to the broth for extra flavor)
Taste the broth and adjust the seasoning as needed.
3. Prepare the glass noodles
Every glass noodles brand is different, so follow the cooking instructions on the package.
If you're a fan of chicken pho, you'll love this twist on traditional noodle soups using glass noodles and a turmeric spiced chicken broth. The turmeric not only adds a warm golden hue but also has anti-inflammatory properties that benefit overall health. I usually start by frying garlic until golden and aromatic, just as suggested, then adding it to the broth. This step truly elevates the flavor, giving the soup a savory depth that is comforting and inviting. Using rock sugar in the broth balances the savory and spicy elements, creating a perfect harmony. An important tip is to place the cooked chicken in an ice bath to stop the cooking process immediately; this keeps the meat tender and makes shredding easier—ideal for tossing into the soup. When adding vegetables like mushrooms, carrots, and daikon, I like to allow a gentle simmer so they become tender but retain some texture, which contrasts nicely with the chewy glass noodles. Speaking from experience, glass noodles vary significantly between brands, so always follow the cooking instructions on the package to avoid overcooking, as they can become mushy quickly. This soup is excellent for chilly days or when you need something light yet filling. It's also versatile—you can customize it by adding bok choy, spinach, or even a dash of chili oil for extra heat. Give this recipe a try, and you may find yourself making it regularly as a nourishing and soothing meal.
