I used to buy bags of BBQ chips, but nothing compares to the fresh, crispy goodness and customizable flavor of homemade. Plus, knowing exactly what goes into them makes them even more enjoyable. The real secret to amazing homemade BBQ CHIPS isn't just getting them crispy, it's all about that perfect seasoning blend! First, let's talk about the potatoes. I usually go for Russet or Yukon Gold varieties. The thinner you slice them, the crispier your chips will be. I swear by using a mandoline slicer for consistent thickness – it makes all the difference! After slicing, rinse them thoroughly in cold water to remove excess starch; this helps immensely with crispiness. Then, pat them very dry with a clean kitchen towel or paper towels. Moisture is the absolute enemy of crispy chips! Now, for the cooking part. You can either deep-fry or bake them. If I'm frying, I heat vegetable oil to about 350°F (175°C) and fry in small batches until golden brown and crispy. For a healthier option, baking works too! Toss the dried slices with a tiny bit of oil, spread them in a single layer on a baking sheet, and bake at around 375°F (190°C) until they're golden and crunchy, flipping halfway through. Just keep a close eye on them because they can go from perfect to burnt very quickly! But the magic truly happens with the BBQ seasoning. This is my absolute favorite blend, and it’s super easy to whip up. For a batch of chips made from about 2-3 medium potatoes, I typically mix together: 2 tablespoons smoked paprika (this is KEY for that authentic BBQ flavor!) 1 tablespoon brown sugar (packed) 1 tablespoon chili powder 1 teaspoon garlic powder 1 teaspoon onion powder 1/2 teaspoon cayenne pepper (add more if you like it spicy!) 1 teaspoon sea salt (or to taste) 1/2 teaspoon black pepper I combine all these spices in a small bowl until they're well mixed. The trick is to season the chips immediately after they come out of the oil or oven, while they're still hot. The heat helps the seasoning stick better. I usually transfer them to a large bowl, sprinkle the seasoning generously over them, and then gently toss everything together until every chip is coated. Taste and adjust if needed – sometimes I add a little extra salt or a touch more brown sugar for sweetness. Don't be afraid to experiment with your BBQ chips seasoning! Sometimes I add a pinch of mustard powder for a tangy kick, or a tiny bit of cumin for earthiness. The beauty of DIY is that you can tailor it exactly to your preferences.
