During my recent trip to Vietnam, i tried Susu Waterfall Fried Chicken and it was such a fun discovery! There’s this unique Vietnamese fried chicken cooking method called the “waterfall” technique, where hot oil continuously rains down onto the chicken instead of the chicken being fully submerged in oil.
Because of this method, the chicken cooks evenly and gently, locking in all the juices while forming a crispy, golden skin on the outside. The result is super crispy exterior, juicy and tender meat inside while not being overly oily.
You can literally see the oil cascading over the chicken while it cooks and very different from your usual fried chicken process. Every bite had that perfect crunch followed by juicy goodness only thing is that the seasoning might be on the saltier side in my opinion.
