② Heat in a preheated oven at 180 ℃ for 60 minutes.

Read more「いももち 屋台」って検索する人って、あの“外カリッ&中もちっ”の食感と、甘じょっぱいタレの雰囲気を家でも楽しみたい人が多い気がします。私もお祭りの屋台で食べたいももちが忘れられなくて、このさつまいも餅をベースに「屋台っぽく」寄せる食べ方を色々試しました。 まずコツは“仕上げに焼く”こと。レンチンだけだとやわらかくて最高なんだけど、屋台の香ばしさを出すなら、完成したお餅を手に水をつけながら小判型に成形して、フライパンで焼くのがおすすめです。油は引かない〜少量でOK。弱めの中火で両面に焼き色をつけると、表面がカリッとして一気に屋台感が出ます。焦げやすいので、焼き色がついたら火を弱めて様子見するのが安心でした。 次に味付け。屋台のいももちは「みたらし」系が多いので、甘じょっぱダレにするとそれっぽくなります。家にあるもので簡単に作るなら、しょうゆ小さじ1+みりん小さじ1+水小さじ2を耐熱容器に入れて、片栗粉をほんの少し(小さじ1/3くらい)混ぜてからレンチンでとろみをつけると、タレがしっかり絡みます。砂糖を控えたい日は、みりん多め+焼き芋の甘みで十分おいしかったです。 食感がゆるいと感じたときは、さつまいもの水分量が原因なことが多いです。ねっとり系の焼き芋なら豆乳は少なめから入れて調整、逆にホクホク系なら少し多めでもまとまりやすい印象でした。混ぜたあとに「ペーストがトロトロで成形できない」場合は、片栗粉を小さじ1ずつ足すとリカバリーできます。 最後に、屋台っぽさを上げるトッピング。王道はきな粉+黒蜜だけど、私は焼いたあとに“追いきな粉”をたっぷりかけるのが好きです。香りが立って、コンビニスイーツに戻れないかも…ってくらい満足感が出ました。食物繊維たっぷりのさつまいもと、豆乳のたんぱく質で腹持ちも良くて、ダイエット中のおやつとしても罪悪感が少なめ。 屋台のいももちが恋しくなったら、レンチン→フライパン焼き→甘じょっぱダレ、の流れでぜひ試してみてください。
