Cheesy Potato Breakfast Bowl | Air Fryer Meal Prep

This is my FAVORITE breakfast. I prep enough ahead of time so that I can freeze bowls for future days. This recipe was inspired by Taco Bell’s spicy potato bowl!

My ingredients amount made enough for roughly 3 bowls. After freezing for future meals, I reheat in the microwave.

Ingredients:

• Potatoes (I used two small potatoes)

• Sausage links (I used 6 frozen)

• Eggs (I used 6)

• Paprika, salt, pepper, parsley

• Cheddar cheese

• Taco Bell Chipotle sauce

• Sour cream (optional)

• Hot sauce (optional)

• Guac (optional)

• Queso (optional)

Directions:

1. Cut potatoes into small chunks. Let sit in ice water for at least 10 minutes, ideally 30 minutes.

2. Once soaked, strain the water and season the potatoes with paprika, salt, pepper, and parsley.

3. Air fry the potatoes at 400°F for 10-15 minutes. Shake the potatoes halfway through. You can cut into one to check the texture.

4. Prepare scrambled eggs. Add Greek yogurt, cottage cheese, cheddar cheese, or any spices to your liking. I kept it simple and just used eggs and parsley, salt, and pepper.

5. Prepare sausage links, i microwaved pre-cooked, frozen links. Cut into small pieces.

6. Assemble the bowl with all ingredients. Add shredded cheese on top and let melt. Top it off with Taco Bell’s Chipotle sauce.

7. Optionally, add toppings like sour cream, hot sauce, queso, or guacamole. Enjoy!

Then I learned the secret: soaking those diced potatoes in cold water! It sounds like an extra step, but trust me, it’s a game-changer. The main reason we soak potatoes, especially for air frying, is to remove excess starch. Starch is what makes potatoes gummy or prevents them from getting that golden, crunchy exterior we all crave. My go-to method, as mentioned in the recipe, is at least 10 minutes, but honestly, if I have time, I aim for 30 minutes in a bowl of really cold water, or even ice water if I'm feeling fancy! Just make sure those cubed potatoes are completely submerged. You'll actually see the water get a bit cloudy as the starch releases. After soaking, don't skip the crucial step of drying them thoroughly. I usually spread them out on a clean kitchen towel or use paper towels to pat them completely dry. Any residual moisture will steam them instead of crisping them up in the air fryer. This little trick completely transforms the texture of your air-fried potatoes, making them perfectly crispy on the outside and fluffy on the inside – ideal for those cheesy potato breakfast bowls! It's especially vital when you're making a batch to meal prep, as that initial crispiness holds up better during reheating. Beyond the perfect potatoes, I've also experimented with different ways to customize my breakfast bowls. While cheddar is classic, a blend of Monterey Jack and Colby adds an extra creamy melt. Sometimes I'll swap out the sausage links for crumbled breakfast sausage or even some spiced black beans for a vegetarian twist. And don't even get me started on toppings! While Taco Bell Chipotle sauce is a must, I sometimes add a dollop of homemade avocado cream or a sprinkle of fresh cilantro for extra flavor. For meal prep, I often pre-portion the cooked potatoes, sausage, and eggs into containers. I keep the cheese and sauces separate until I'm ready to reheat. This way, everything stays fresh, and the cheese melts perfectly right before serving. For those mornings when you're really short on time but still want a hearty meal, consider making a larger batch of the seasoned, air-fried potatoes. They can be stored in the fridge for up to 3-4 days and quickly reheated in the air fryer for a few minutes to regain their crispness. Then, you just scramble some fresh eggs and warm up your pre-cooked sausage. It's almost as fast as a frozen meal, but so much tastier and healthier!
