Healthy Chicken Gyro Recipe

Ingredients:

• chicken

• red onion

• bell pepper

• cucumber

• Greek yogurt

• lemon juice

• dill weed

• hummus

• pita / flatbread

• spices

Directions:

1. Prepare your chicken. Cook chicken with spices like cinnamon, cloves, paprika, chili powder, salt & pepper

2. Cut up vegetables like red onion, cucumber, and bell pepper

3. To make tzatziki, combine shredded or very small slices of cucumber with plain Greek yogurt, garlic, and lemon juice.

4. On flatbread, spread hummus. Add the cooked chicken, vegetables, and tzatziki on top. Optionally, add feta cheese. Enjoy!

Cooking the chicken in those amazing spices isn't just for taste; it's a fantastic way to keep it lean and flavorful without relying on heavy sauces. I love to pan-fry mine, but sometimes I'll even grill it for an extra smoky kick, especially when the weather's nice. It’s such a simple way to get lean protein into your diet. This really helps make it an "easy & healthy meal." Then there are the veggies – oh, the various veggies! Red onion, bell pepper, cucumber… they add so much freshness and crunch. I always try to load mine up, sometimes even adding some shredded lettuce or spinach for an extra boost of greens. It’s a great way to sneak in those essential vitamins and fiber. And let’s be real, a colorful meal just tastes better, right? Now, the homemade tzatziki. This is where the real magic happens, and it's surprisingly easy to whip up. Forget store-bought versions that can be loaded with extra sodium or questionable ingredients. My '(Lazy) homemade tzatziki,' as I like to call it, uses plain Greek yogurt, which is packed with probiotics and protein. Just a little grated cucumber, fresh dill, and a squeeze of lemon juice, and you have a creamy, tangy sauce that elevates the whole dish. It’s so much lighter than mayo-based sauces and truly makes this a healthy chicken gyro. For the wrap itself, consider your pita or flatbread. While traditional pita is great, sometimes I opt for a whole wheat version to add more fiber. Or, if I'm really watching my carbs, I might even serve the chicken and veggies over a bed of crisp lettuce, turning it into a delicious gyro salad!
