Ingredients:
• tortilla chips
• queso of choice
• shredded cheddar cheese
• lime juice
• sour cream
• paprika, cumin, chili powder, salt, pepper
• jalapeños
• green onion (optional)
Directions:
1. Preheat oven to 375°. Line a pan or baking sheet with aluminum or or parchment paper.
2. In a separate bowl, mix sour cream, paprika, cumin, chili powder, salt, pepper, lime juice, a little bit of cayenne, and a little bit of juice from canned jalapeños.
3. Pour chips onto pan or tray. Cover the chips in paprika and a very small amount of lime juice. Immediately top the chips with queso, your sour cream mixture, shredded cheese, and jalapeños.
4. Bake for 5-10 minutes (keep watch to prevent burning) or until the cheese is melted and warm. Remove from the oven and serve warm. Enjoy!
Additional tips: if you don’t like soggy chips, you can warm the chips separately from the queso/sour cream/toppings mixture. Additional toppings could include shredded chicken, cilantro, refried beans, or seasoned ground beef
