Sugar-Free Cake Batter Candied Nuts

I am obsessed with cake batter flavoring, which I add to nearly everything…. This time, nuts! This recipe can serve 2 people, with 1 serving being only 170 calories!

Ingredients:

• 3 tbsp water

• 3 tbsp white monk fruit sweetener

• 1 tsp cake batter extract

• a tiny hint of salt

• 1/2 cups of mixed nuts (or nuts of your choice)

Directions:

1. Add water to a pot and heat on medium heat on the stove. Once warm, add the cake batter extract, dash of salt, and monk fruit sweetener. Mix well (and carefully).

2. Continue mixing until the monk fruit sweetener dissolves. Add nuts and gently mix until they’re fully covered.

3. Let the nuts sit for about 1-2 minutes, or until the liquid starts to bubble. Once bubbling, mix a few more times.

4. Turn off the heat but leave the pot on the hot burner. Let sit for 30 seconds - 1 more minute more, or remove if the liquid starts to darken (we don’t want it to burn).

5. On parchment paper, gently pour the nuts out. Scrape any liquid out of the pot and onto the nuts. Let sit for at least 10 minutes. Do NOT touch the nuts with your hands while they cool - if you would like to give them a mix while they cool, use a utensil.

6. Enjoy while warm or cooled. When cool, the “sugar” will harden more. Enjoy!
