Sugar-free Candied Nuts Recipe

I love candied nuts and was recently given an order of mixed nuts by accident with my grocery delivery! So I decided to make sugar-free candied nuts. *nuts have a small amount of natural sugars, I’m just not adding any more!

This recipe can serve 2 people, with 1 serving being only 175 calories!

Ingredients:

• 1/2 cup Mixed nuts (or any nut of your preference)

• 3 tbsp Monk fruit sweetener (I use golden, but white or brown will work)

• 1/2 tsp Vanilla extract

• 1/2 tsp Cinnamon

• 3 tbsp Water

Directions:

1. Add water to a pot and heat on medium heat on the stove. Once warm, add the cinnamon, vanilla, and monk fruit sweetener. Mix well (and carefully).

2. Continue mixing until the monk fruit sweetener dissolves. Add nuts and gently mix until they’re fully covered.

3. Let the nuts sit for about 1-2 minutes, or until the liquid starts to bubble. Once bubbling, mix a few more times.

4. Turn off the heat but leave the pot on the hot burner. Let sit for 30 seconds - 1 more minute more, or remove if the liquid starts to darken (we don’t want it to burn).

5. On parchment paper, gently pour the nuts out. Scrape any liquid out of the pot and onto the nuts. Let sit for at least 10 minutes. Do NOT touch the nuts with your hands while they cool - if you would like to give them a mix while they cool, use a utensil.

6. Enjoy while warm or cooled. When cool, the “sugar” will harden more. Enjoy!

Getting that perfect, crunchy coating is key. After you've mixed your nuts in the bubbling monk fruit syrup, the cooling process is crucial. I always spread my sugar-free candied mixed nuts out thinly on parchment paper. If you have a silicone baking mat, that works wonderfully too, preventing any sticking. Resist the urge to touch them with your hands while they cool – they'll be hot and sticky! A utensil is your best friend here if you need to separate them. Letting them cool completely allows the monk fruit "sugar" to harden, giving them that satisfying snap. Beyond just snacking, these candied nuts are incredibly versatile. I love sprinkling them over a fresh salad for a sweet and savory crunch, adding them to my morning yogurt or oatmeal, or even using them as a topping for healthy desserts. They also make a fantastic edible gift if you put them in a cute jar!
