Lemon asparagus orzo with Chicken

This lemon asparagus orzo with chicken is so quick, easy and delicious! Orzo is one of my favorite types of pasta and I love to make it similarly to a risotto. It is the perfect summer weeknight dinner.

For the chicken I just seasoned it with the basics and air fried it for 15 minutes! I suggest having a piece of chicken with a scoop of the orzo and it’s the perfect bite and don’t forget to add a little parmesan cheese!

I usually cook a half white onion first, which adds a subtle sweetness, then add the orzo and toast it for 2-5 minutes before pouring in the broth and lemon juice. When it’s time to add asparagus, I use chopped fresh stalks that cook gently in the broth as it simmers, absorbing all the flavors. Covering the pan allows the orzo to cook evenly while the broth slowly reduces. This method results in a creamy, flavorful base that pairs perfectly with the tender chicken. This recipe really shines when paired with a simple green salad or steamed vegetables for a well-rounded summer meal. It’s also very versatile—if you don’t have asparagus, green beans or peas work well substitutes. For an extra touch, try adding a sprinkle of fresh herbs like parsley or basil right before serving.
