Ingredients:
The Wet Mix
• 3 very ripe bananas (mashed, about 1 to 1.5 cups)
• 1/2 cup vegetable oil (or canola)
• 1 cup granulated sugar
• 1 large egg (room temperature)
• 1 tsp vanilla extract
• 2 tbsp buttermilk (The "secret" for moisture)
The Dry Mix
• 2 cups all-purpose flour
• 1 tsp baking soda
• 1/2 tsp salt
• 1 tsp cinnamon (optional, but recommended)
• 3/4 cup chopped walnuts (Keep some aside for the top!).
Instructions:
1. Prep: Preheat your oven to 325°F (165°C). Grease a 9x5-inch loaf pan thoroughly. Pro Tip: Using a slightly lower temperature (325°F) ensures the middle cooks through without the edges getting too dark or crusty.
2. Mix Wet: In a large bowl, whisk together the mashed bananas, oil, sugar, egg, vanilla, and buttermilk until smooth.
3. Mix Dry: In a separate bowl, whisk the flour, baking soda, salt, and cinnamon.
4. Combine: Gently fold the dry ingredients into the wet ingredients. Do not overmix—stop as soon as you see no more streaks of flour. Overmixing leads to tough bread.
5. Add Crunch: Fold in 1/2 cup of the walnuts. Bake: Pour the batter into the prepared pan.
6. Sprinkle the remaining 1/4 cup of walnuts over the top. Bake for 60 to 65 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool: Let it cool in the pan for 10 minutes, then move to a wire rack.
