My Homemade Version of ZUPPA TOSCANA

It’s snowing here in New England so you know what that means…. ITS SOUP SEASON

I was craving a soup with potatoes and meat so I thought, what soup would I want? It would be Zuppa Toscana from Olive Garden, however I am not driving in the snow. So here is my recipe, try it below and follow me to see more amazing recipes

Ingredients:

•1/2 pound mild Italian sausage or ground beef

•2 tablespoons butter

•1/2 white onion

•1 tablespoon jar garlic or 3 cloves finely minced

•3 cups chicken broth

•3 medium yellow potatoes (cut into 1 inch cubes)

•1 cup heavy cream

•1 cup chopped kale or spinach (or in my case both lol since my Walmart order gave me the spinach kale blend)

•toppings : bacon, Parmesan cheese definetly Parmesan cheese

Directions:

•Brown the sausage in a pot until it’s is brown, not grey. Season with Salt, Pepper, and Garlic to your taste. (You can also use Adobo Season Complete) Once browned you’re going to remove the sausage and add in the butter.

•Once the butter is melted you’re going to add in your diced white onion and cook until it’s tender or translucent. Once onion is cooked add in your garlic and cook until fragrant

•To deglaze the pan you’re going to add in your chicken broth. While starting to boil scrape the bottom of the pan to get all that goodness. Add potatoes and boil until fork tender.

•Once potatoes are fork tender you’re going to add your sausage back in, the heavy cream, and the chopped up kale. Once the soup is well incorporated, I cooked it for another 2-3 mins. You can remove it from the heat.

•You can top the soup with whatever you see fit, I topped mine with some Parmesan Cheese and enjoy
