✨ The Beef Stew I Make When We Need Comfort✨

This is one of those dinners where if you are craving something hearty and warm, this is your go to.

Ingredients:

•2 lbs beef chuck, cut into 1½-inch chunks

•2 tbsp olive oil

•1 tsp salt

•½ tsp black pepper

•3 tbsp all-purpose flour

•1 medium onion, chopped

•3 cloves garlic, minced

•3 tbsp tomato paste

•4 cups beef broth

•1 cup water (or more broth)

•1 tbsp Worcestershire sauce

•1 tsp dried thyme

•1 tsp dried rosemary

•2 bay leaves

•4 carrots, sliced

•3–4 Yukon gold potatoes, cubed

•2 celery stalks, sliced

Directions:

- Pat beef dry and season with salt and pepper. Toss with flour. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches until deeply browned. Remove and set aside.

- In the same pot, sauté onion for 3–4 minutes until soft. Add garlic and cook 30 seconds. Stir in tomato paste and cook 1–2 minutes until darkened. Return beef to the pot. Add beef broth, water, Worcestershire, thyme, rosemary, and bay leaves. Stir.

-Bring to a gentle boil, then reduce to low, cover, and simmer 1½ hours. Add carrots, potatoes, and celery. Cover and simmer 30–45 minutes, until beef is tender and vegetables are soft. Taste and adjust salt and pepper. Remove bay leaves before serving.
