My secret to achieving that ultimate crispiness starts with the preparation. First, making sure your calamari is really, really dry after cleaning. Moisture is the enemy of crispiness! I usually pat them down thoroughly with paper towels. For the dredge, I use a mix of all-purpose flour, a bit of cornstarch (this is key for extra crisp!), and my special reddish-brown spice blend. This blend usually includes smoked paprika, a touch of cayenne pepper for that spicy kick, garlic powder, onion powder, and of course, salt and pepper. Sometimes, I even add a pinch of chili flakes for an extra fiery punch! When it comes to frying, oil temperature is non-negotiable. You want your oil to be around 350-375°F (175-190°C). Too cool, and your calamari will be greasy; too hot, and it'll burn before it's cooked through. And please, whatever you do, don't overcrowd the pan! Fry in small batches to maintain the oil temperature and ensure each piece gets beautifully golden-brown and crispy. It only takes a minute or two per batch, so keep a close eye on them. You'll see them transform into that gorgeous, inviting color. The beauty of fried calamari is its simplicity, yet the reward is so great. Those perfectly cooked rings and tentacles are incredibly flavorful, especially with the added warmth from my spice blend. I love serving mine straight from the fryer, piping hot, in a paper-lined basket – just like you’d get at a seaside shack! A squeeze of fresh lemon juice is non-negotiable; it brightens up the whole dish and cuts through the richness. And for dipping?
