A bright, balanced bowl with grilled shrimp, citrus segments, spring vegetables, and herbed quinoa. Light, juicy, and perfect for a seasonal lunch or dinner.

Ingredients:
• 8–10 shrimp, peeled and deveined
• 1 cup cooked quinoa
• ½ orange, segmented
• ½ cup sliced cucumber
• ¼ cup shredded carrots
• ¼ cup chopped herbs (mint, parsley, basil)
• 1 tbsp olive oil
• 1 tbsp lemon juice
• Salt & pepper
• Optional: avocado slices or microgreens
Directions:
1. Grill shrimp with olive oil, salt, and pepper until pink.
2. In a bowl, layer quinoa, veggies, and citrus.
3. Add grilled shrimp on top.
4. Drizzle with lemon juice and sprinkle herbs.
5. Garnish with avocado or microgreens. Serve warm or chilled.
