For the spring rolls:
* Rice paper wrappers
* Cooked shrimp (peeled, deveined, sliced in half)
* Rice noodles (thin vermicelli)
* Lettuce (butter or romaine)
* Fresh herbs (mint + cilantro)
* Cucumber or avocado (optional but sooo good)
👩🍳 Step-by-step: Spring Rolls
1. Cook the noodles 🍜
Boil your rice noodles according to package. Drain and rinse with cold water so they don’t stick.
2. Prep the shrimp 🦐
If not cooked: boil shrimp 2–3 mins until pink, then cool. Slice in half lengthwise for that pretty look.
3. Set up your rolling station ✨
Have everything laid out: noodles, shrimp, lettuce, herbs, and a bowl of warm water.
4. Soften the rice paper 💧
Dip one rice paper sheet into warm water for about 5–10 seconds until soft but not too floppy.
5. Layer it up 💚
On the bottom third of the wrapper:
* Lettuce
* Small handful of noodles
* Herbs
* Cucumber/avocado
Then place shrimp near the top (so it shows through when rolled = aesthetic 😍)
6. Roll like a pro 🌯
* Fold bottom over the filling
* Fold in the sides
* Roll tightly upward
🥜 Peanut Sauce (THE star honestly)
Ingredients:
* ½ cup peanut butter
* 1–2 tbsp hoisin sauce
* 1 tbsp soy sauce
* 1 tbsp lime juice
* 1–2 tsp sugar or honey
* ½ cup warm water (to thin)
* Optional: chili paste for spice

1. Mix the base 🥄
In a bowl, combine peanut butter + hoisin + soy sauce.
2. Add flavor 🍋
Stir in lime juice and sugar/honey.
3. Thin it out 💧
Slowly add warm water while mixing until smooth and creamy (not too thick, not too runny).
4. Taste & adjust 💅
Add more sweetness, salt, or spice depending on your vibe.

* Don’t overfill or they’ll tear
* Work one roll at a time (rice paper gets sticky fast)
