Sunday Dinner After a Long Weekend
This weekend was one of the longest weekends ever.
I made pork chops Friday night after work, woke up Saturday with a migraine but pushed through (with the help of some rescue meds), went to the Fun Fair at the kids school, went to the store to pick up presents for my son’s friend, picked up my son’s cake, went out to dinner Saturday, and celebrated my son’s 7th birthday! Sunday we went to a pool birthday party for my son’s friend, the kids wanted to run to and from the park so we got a little workout in there, and then we went back to the store to pick up dinner and here we have it!
Got some good food, a lot of running around, a lot of celebrating, a good family workout, and now time to relax 😌
I love weekends like this and I know the kids and I will sleep so well tonight.
Tomorrow is a cheer practice and jiu jitsu practice day so we need all the sleep we can get!

After such an intense long weekend filled with activities and celebrations, I always find that a comforting Sunday dinner really helps the whole family unwind and recharge. This weekend, after running around for my son’s birthday and attending multiple events, we picked up a simple yet delicious meal featuring steak bites, shrimp, mashed potatoes, and broccoli. It’s amazing how quick and easy meals like this can still feel special and nutritious, especially when energy is low from a busy schedule. I’ve learned that balancing active weekends with wholesome dinners is key to maintaining both physical and mental well-being. The steak and shrimp provided a great source of protein to fuel muscle recovery after all the running and playing, while the mashed potatoes and broccoli gave us the carbs and greens to round out the meal. In my experience, involving kids in weekend activities like fun fairs or pool parties not only creates happy memories but also naturally encourages them to stay active. Following this with nourishing, straightforward meals helps keep their energy stable and mood positive. Sometimes, simple dinners are the best part of winding down after hectic family weekends. Scheduling rest on Sunday night is essential too, especially before the busy week ahead with cheer and jiu-jitsu practices. Everyone sleeps a little better knowing they’ve had quality time, good food, and a chance to relax together. If you’re looking for quick Sunday dinner inspiration after your busy weekends, I highly recommend trying out a blend of your favorite proteins with easy sides like mashed potatoes and steamed veggies. It’s a comforting way to celebrate both the end of a special weekend and the start of a great week.
