Occasion & Servings:

Creamy Shrimp & Grits with Bacon

Ingredients (2–3 servings):

For the grits:

• 1 cup stone-ground grits

• 4 cups chicken broth (or half broth, half water)

• 1 cup heavy cream

• 1 cup shredded sharp cheddar cheese

• 2 tbsp butter

• Salt & pepper to taste

For the shrimp topping:

• 1 lb shrimp, peeled & deveined

• 4 slices bacon, chopped

• 1 tbsp butter

• 1/2 cup heavy cream

• 1/2 cup chicken broth

• 2 cloves garlic, minced

• 1/2 small red bell pepper, diced (optional for color)

• 1/2 tsp paprika

• 1/4 tsp cayenne pepper (optional, for heat)

• Salt & pepper to taste

• Chopped green onions (for garnish)

• Fresh parsley (optional, for garnish)

Detailed Steps:

Instructions:

1. Cook the grits:

• In a medium pot, bring chicken broth to a boil. Slowly whisk in grits.

• Reduce heat to low and cook, stirring often, until thickened (about 15–20 min).

• Stir in cream, cheese, butter, salt, and pepper. Keep warm.

2. Cook the bacon:

• In a skillet over medium heat, cook bacon until crispy. Remove and drain on paper towels. Leave about 1 tbsp bacon grease in the pan.

3. Cook the shrimp:

• Season shrimp with paprika, cayenne, salt, and pepper.

• In the bacon grease, sauté shrimp for 2–3 minutes per side until pink and cooked through. Remove shrimp from skillet.

4. Make the sauce:

• In the same skillet, melt butter and sauté garlic (and bell pepper, if using) until fragrant.

• Stir in chicken broth and cream, letting it simmer until slightly thickened (about 3–4 minutes).

• Return shrimp to skillet, toss to coat in sauce.

5. Assemble:

• Spoon grits into a bowl, top with shrimp and sauce.

• Sprinkle crispy bacon, green onions, and parsley over the top.
