What’s For Dinner Vegan Edition
When we decide to eat healthier, people often refer to it as “going on a diet.” Personally, I prefer to think of it as treating my body well. Sometimes, we need to step back from eating meat and start focusing on more fulfilling meals and vegetables for strength. We still get protein from some of our vegetables. For tonight’s dinner, I tried something new—spinach with cherry tomatoes, spiral noodles, mac & cheese, honey and cinnamon yams, and baked garlic and pepper radishes. I also fried mushrooms in olive oil. Typically, I wouldn’t make these dishes, but I’m embracing a healthier lifestyle. Everything was well-seasoned and tasty.
