Set the water to boil, add the shrimp to it when cooked, the meat is bouncy, and scoop and rest.
Bring the shrimp in a mixing bowl. Add cayenne pepper and roasted rice. Gently mingled to fragrance.
Add shallots, parsley and season with fish sauce, lemon juice and a little sugar.
Mix well together. Taste as you like.
